If, like me, you food accounts on Instagram, then you’ve undoubtedly already seen any number of versions of this autumnal kale & squash salad while perusing your feed. They all contain more or less the same ingredients (and who can blame them? Squash, apples, and kale together just makes SENSE), and they’re all adorned with stacked apple slices (the visual trend of the last 2 years, no?) So, I can’t promise that this version is too different from any other. BUT MAYBE you will be intrigued by the addition of shredded raw Brussels sprouts in mine? (Actually my favorite way to eat them.) OR PERHAPS the spiced apple cider vinaigrette will pique your interest? If that’s the case, then carry on, friends! Details are below 🍎🍂⠀⠀⠀⠀⠀⠀⠀⠀⠀

SPICED APPLE CIDER VINAIGRETTE⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup pure apple cider, reduced halfway (the juice, not the vinegar)⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 tsp cinnamon⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tbsp tahini⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup apple cider vinegar⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 1/2 tbsp Dijon mustard⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 medium shallot, minced⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp liquid aminos (or sub salt, to taste)⠀⠀⠀⠀⠀⠀⠀⠀⠀

Begin by pouring the apple cider into a small saucepan. Add the cinnamon. Bring to a boil, then reduce heat and let simmer until the liquid is reduced by about half (this will help concentrate the cider flavor.) Remove from heat and let cool. Add the rest of the ingredients to the saucepan (no need to dirty another bowl!) and whisk to incorporate. Pour the dressing over the greens and toss to combine.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Build it: dressed curly kale, tricolor quinoa, finely shredded Brussels sprouts, chickpeas, cinnamon-roasted delicata squash, honey crisp apple slices, and pecans.⠀⠀⠀⠀⠀⠀⠀⠀⠀
