🌱 Pumpkin Grilled Cheese 🍽

Pumpkin, cheese, and bread make an awesome combo! These grilled sandwiches are filled with roasted pumpkin, sautéed spinach + onion, and a creamy pumpkin cheese sauce. Pan-fry the bread in some oil to add extra flavor and texture. 🍞🧀 ⁠

⁠* INGREDIENTS *
Pumpkin Cheese Sauce⁣
Roasted Pumpkin (sliced – see the link below)⁣⁣
1.5 tbsp Olive Oil (+ extra for grilling)
2 large Onions (sliced 1/4 inch thick)
1/4 tsp Fine Sea Salt
4-6 cups Baby Spinach
1 large Apple (sliced⁣⁣)
8 slices Whole-grain Bread

* DIRECTIONS *

1. For the Caramelized Onions, heat 1.5 tbsp of olive oil in a large pan, over medium heat.
2. Slice the onions to toss in the pan, sprinkle some salt, and stir occasionally. Allow them to cook for 30-40 minutes, until the onions are soft & gooey, with a deep brown color (you may need to add a touch of water throughout, to keep the onions from sticking).
3. Blanch the Spinach by bringing a pot of water to a boil and add spinach for 30-40 seconds (until bright green), then transfer to an ice-bath to quickly cool.
4. Drizzle a bit of olive oil onto 8 slices of bread on both sides. Top 4 of the slices with ~2 tbsp of the Pumpkin Cheese Sauce.
5. Place a few slices of roasted pumpkin/squash on those 4 slices of bread, then portion out the onions, spinach, and apples for each sandwich. Add a few more tbsp of cheese sauce, then top with the remaining bread.⁣
6. Heat a skillet over medium heat. Once hot, cook each sandwich for 2 minutes, pressing down with a spatula, or until golden brown on one side. Flip & cook for 1-2 more minutes.
