Aren’t these little quinoa lentil fritters made from leftovers and placed lovingly on a bed of lettuces and topped with chermoula the cutest things you’ve ever seen?

Okay, a bit of a stretch, but they are really good, if I do say so myself.
I had some lentil pate and quinoa leftover from the last few days, and when in doubt, they are a match made in heaven. I’ve also been dying to make some chermoula sauce, which is typically found in Moroccan or Tunisian food. It is a blend of flavorful and pungent herbs and spices and literally dresses up any dish. You can put it on veggies, tofu, fish, beef or chicken (if that’s your jam). Herbs like parsley, cilantro and mint add a kick ass base. A little smoke paprika, cumin and coriander add some warmth. Lemon juice and zest and brightness and a little olive oil just brings it all together.

1 cup mint leaves
1 cup parsley leaves and some stems
1 cup cilantro leaves and some stems
2 cloves garlic
1 tsp cumin
1 tsp coriander
1 tsp smoked paprika
1/2 tsp sea salt
1/4 cup olive oil
zest and juice of one large lemon
.
Add all the things to a blender and combine.
