🍋Crust and Topping:
1 1/2 cup rolled oats
3/4 cup almond flour
1/2 cup coconut sugar
1 tbsp lemon zest
1/4 tsp baking powder
1/4 tsp salt
2/3 cup room temperature coconut oil (soft, not melted)
2 1/2 cups fresh blueberries
7 tbsp raspberry jam
1/2 tsp vanilla extract
1 pinch salt
Preheat oven to 375 F and line an 8×8 baking pan with parchment paper. In a large bowl, combine all crust ingredients except the oil. Once mixed, use your hands to incorporate the coconut oil until a dough forms. Gently press half of the mixture onto the bottom of the prepared baking pan. Bake for 10 minutes, while you prepare the filling.
In a medium bowl, mix together all ingredients. Spoon over the warm crust and sprinkle the remainder of the crust mixture on top. Bake for another 22-27 minutes or until the crust has browned slightly and the filling is bubbly.
Remove from the oven and allow to cool completely. Chill for 2 hours before slicing ❤️
